Code

// Link text.
$wpide_more_text = 'Keep reading →';
// Keep the jump to the #more-123 anchor.
$wpide_more_jump = false;

add_filter( 'the_content_more_link', function ( $link ) use ( $wpide_more_text, $wpide_more_jump ) {
    $url = get_permalink();

    if ( $wpide_more_jump ) {
        $url .= '#more-' . get_the_ID();
    }

    return '<a class="more-link" href="' . esc_url( $url ) . '">' . wp_kses_post( $wpide_more_text ) . '</a>';
} );

Notes

Set $wpide_more_text to your own wording. Set $wpide_more_jump to true to keep the jump to the #more anchor.
